Ingredients  : 

2 tablespoons rice vinegar
2 tablespoons ketchup
2 tablespoons peanut butter
1 teaspoon low-sodium soy sauce
1 teaspoon sesame oil
1 clove garlic, minced
1/2 teaspoon ground ginger
1/4 teaspoon cayenne pepper, or to taste
fresh ground black pepper
1 (16 ounce) package extra-firm tofu, cut into 1/2-inch cubes

Direction  : 

In a microwavable small bowl, mix together black pepper,
cayenne pepper, ground ginger, garlic, sesame oil, soy sauce,
peanut butter, ketchup, and vinegar.

Heat the mixture in the microwave until the peanut butter softens,
around 10-15 seconds, then stir until smooth.

Place the tofu in a big bowl and pour in the sauce, stir to coat.

Cover the bowl using plastic wrap and refrigerate from 30
minutes to a full day, occasionally stirring to make sure the tofu
is coated with the sauce.

Set the oven to 200 degrees Celsius or 400 degrees Fahrenheit.
Spread the tofu on a baking sheet in one layer.

Bake until it is slightly browned, around 10-15 minutes.
